1 - "le" = "il" ou "ils" est une constante du patois poitevin au début du XXème siècle
2 - je soupçonne la prononciation "an" pour la 3eme personne du pluriel de venir d'une lecture extra scolaire de ce qui est écrit (peut-être ironique)

1 - "le" = "il" or "ils" ( "he" or "they") is a constant in the patois of Poitou (center-western France) of early XXth century
2 - In correct french, "mangent" is pronounced "manj" without the nasal "en"; I conjecture that the patois comes from an extra-school lecture (perhaps ironical).
